No cooking disasters this week!

I didn't plan quite right again. I ended the week eating three days of carrots, and I think they planned for a family of four over two meals this week. Forget Lasik, I think my eyesight may improve to 20/20 after this week. These chicken legs were awesome fixed in the air fryer! This is my second take at coucous which I like, but I'm not convinced garlic and lemon go together. (Do you notice a theme in all these food posts?) This was another good one! I roasted the carrots after shortcut microwaving the last ones. I did the potatoes in the oven too, but as whole potatoes. The "dipping sauce" was the equivalent of ranch dip, so who doesn't like ranch dip spread over their food? While the pork chops were cooking, I also made the potato soup so I could keep up with my box arrivals and cooking everything in a week. I liked the corn and potato chowder I had made before better. One of my favorite recipes, but more cooking disasters

This week I made what has been one of my favorite recipes, but there are still some cooking mishaps you can laugh at... because otherwise it would be boring to read these blog posts, right? I've been avoiding rice recipes for multiple reasons. 1) I don't really like rice, 2) why eat carbs unless you love them, 3) the last time I got rice and cooked it, it turned out crunchy. This time, I put extra water, cooked it a while, but in more water, cooked it some more, and added more water. Seriously. I know that's not the right way to cook rice, but it at least turned out so much better this time. I also upgraded to add ground meat to this recipe. They turned out so good.  That's with the fresh salsa and sour cream added. The leftovers were even better because I forgot the salsa and sour cream. Two words: lime juice. I keep saying I'm going to cut it out, but I thought I needed it for the salsa. I don't think I needed it for the salsa. I rarely don't order ...

Not one, but two cooking mishaps... or is that three?

My EveryPlate box ended up coming a day late this week. It's still August in Texas, so the ice was melted and I had to toss the meat and sour cream. That was mishap #1 that I'm not sure if it counts towards my total or not. That wasn't on my part. Thankfully, I had some ingredients in the freezer and was able to add a couple of things from my grocery order to pull off the recipes.  After the last jalapeno incident, I cooked it with the bell pepper and onions to skip belly burn. Good choice. I'm staying away from adding zest in my sour cream after this. I'm just not digging it right now. I can always eat fajitas though! I do like doing burger patties in the air fryer.  I tried the potatoes in there too, but wasn't as successful. I think that's going to take some trial and error. Now, see this little thing here? Saturdays are now food posting days because all I do these days is cook and work. During COVID days, I have become quite the expert in Chex Mix.  Peanut butter and chocolate Chex with honey roasted peanuts and Reese's Pieces.  Cinnamon Chex with dried cranberries, yogurt raisins and chocolate covered cranberries. The traditional mix of wheat, corn and rice Chex with coconut chips and M&Ms. I've eaten a whole lot of Chex Mix. It's better than baking cookies like in the early days of quarantine, right? I decided that with all the cooking I've been doing, instead of oven roasting all my veggies and pan cooking all my meat I would get an air fryer.  Of course, it had to be purple! If it hadn't been purple, it would have felt too different from the crockpot and the toaster.  I bought a lot of accessories too that I'll need to try out! I own a frappe maker that I haven't used in quite sometime.  The ones I make never taste right. Probably because I don't add cups of sugar or sugary substances. I decided I would try brewing coffee, adding it to the International Delights iced coffee I'm addicted to. Keep in mind, I had to buy coffee because I never drink regular coffee. I like a hint of coffee such as in a Frappuccino. Well, actually, when I get them, I get them with an extra shot so I can get more than a mere hint of coffee. I get it loaded up. I go back to the other end of the house while it brews because I know when the blender starts it will wake anyone in the neighborhood who dared to think that they would sleep late. Seriously, the thing almost gives me a heart attack it is so loud, even though I know it's going to happen.  When I came back into the kitchen, I had put too much of everything into the blender and it was overflowed and overflung all over the counter. I'm becoming a chef now... or something

A couple of weeks ago when my box arrived half cooked, I salvaged pasta and bought ingredients to recreate my favorite dish. I didn't nail it quite right.  I make quesadillas pretty regularly and something about the recipe seemed like they were making it hard. Again, the chicken strips with the southwest spice tastes dry.  They were good though. I was excited this week to upgrade to steak instead of chicken this week. A lot of people in the Facebook groups for EveryPlate complain about the cuts of meat. I've never had a complaint about the meat. I thought the steak was good. (My pork chops have always been thick and good as has the chicken breast I've gotten. There are complaints in the group about "woody" chicken. I've not had that issue.) There were so many roasted vegetables though. I couldn't eat all the veggies in two servings. I think this was the first time I threw out some leftovers. For some reason, these were the be...
